Coconut and chicken curry together? What an unexpected yet utterly divine flavour pairing.
I like to always keep my opinions on this blog real and authentic. The flavour profile of this curry is unique but I wouldn’t say it will top the charts for everybody. Is it rich and succulent? Absolutely. Does the coconut cream add a rare flavour dimension to the chicken curry? Yes! However, this coconut-chicken curry on its own may taste a bit too rich mainly because of the coconut cream, but, with sides like roti, rice and possibly a few fresh carrot sticks to the break down the richness of this stew, it can certainly create a memorable flavour sensation.
Secondly, I used chicken wings for this recipe because they cook quickly and become extremely tender when stewed, to the point of falling of the bone. They are also more elegant when plating, compared to other cuts of chicken. However, if you don’t have chicken wings, thighs and drumsticks can be really good substitute.
Additionally, I air-fried the chicken wings first, before stewing because even though the crispiness disappears once the wings are stewed, there is a ‘fast-food chicken taste’ the wings acquire in the air-fryer which make this chicken curry distinct.
Recipe Notes
Chicken: for this recipe, I specifically used chicken wings. An alternative can be chicken thighs or chicken drumsticks if you don’t have chicken wings.
Coconut cream: the addition of the coconut cream adds a level of richness to the stew, which may be a little overwhelming to the tastebuds….but it wouldn’t be a coconut curry without the addition of the coconut (…you know when a dish is so tasty but you cant’t have more than 6 bites without feeling like you need a break from the food? That’s what coconut cream can do to some people’s tastebuds).
Curry powder: I used mild curry powder because I did not want to scream while eating. If you can handle the heat, go ahead and use curry powder which is designed to make people yell out loud for help!!!!!!!
Chicken stock powder: You can substitute the chicken stock powder (+ water ) with store-bought liquid chicken stock, but in my opinion, the chicken stock powder with water added adds more flavour depth than store-bought chicken stock.
